Shanta Nimbark Sacharoff is the author of several vegetarian cookbooks and has had may years experience cooking for groups of all sizes. She will cater small dinner parties of six to eight, or a big banquet for sixty to eighty.

All food is prepared using fresh organic ingredients whenever possible. Her vegetarian menus are prepared using only moderate amounts of dairy when necessary, and her vegan recipes use soy or other alternative non-dairy ingredients without compromising authenticity or flavor.

Menus will vary depending on the location, the size of the group and your budget. Shanta will work with you to put together a menu that fits your plans. Below are some sample menus for various kinds of parties.

INDIAN DINNER for 8
  • Papadam – Wafer thin crackers made from rice and bean flours,
    served as an appetizer
  • Mattar Paneer OR Mattar Tofu – Home-made Indian-style cheese or fresh
    tofu cooked with tomatoes, peas, and freshly ground spices
  • Rice Pilau – Fragrant Basmati Rice prepared with nuts, golden
    raisins and saffron threads
  • Raita – Cucumber salad prepared with yogurt (dairy or soy),
    cucumbers and spices
  • Peanut or Mint Chutney – Spicy home-made chutneys made from
    peanuts or mint leaves and fresh-ground spices
Mexican Picnic for 25
  • Chilaquella – A hearty Mexican-style casserole made with tortilla
    strips, tomatoes, cheese (dairy or soy) and/or tofu.
  • Mexican Rice – White or brown rice cooked with tomatoes and
    spices
  • Spring mix salad with vinaigrette
  • Pinto or Black Beans - cooked with Mexican herbs, whole or refried
    (Shanta – guacamole appetizer?)
Greek Luncheon for 12
  • Spanakopeta – A savory baked stuffed appetizer made with phyllo,
    feta cheese or tofu, olive oil and herbs
  • Moussaka – A layered casserole prepared with eggplant and/or
    other fresh vegetables, cheese or a vegan alternative,
    white sauce and fresh herbs
  • Greek-style Lentil Soup - made with green lentils, vegetables and
    red wine
  • Greek salad – Fresh spinach leaves with feta dressing or herb
    vinaigrette

Shanta will make your party a success. She brings prepared food to your location and assembles the dishes on site. Advance arrangements may be made for additional service and clean up. A week’s notice is requested for small parties, and up to four weeks may be necessary for larger groups. Fees vary with the menu, the number of people, and the amount of help that may be needed.
